- 1 kg Basmati Rice
- 500 g Tomato - Hybrid
- 1 head Cauliflower
- 1Bunch Pudina
- 100G Oleo
- 100 g Tej Patta
- 100 g Garlic
- 100 g Dalchini (Cassia )
- 500 g Capsicum Green
- 20 g Cardamom Green
- 50 g Asafoetida Powder
- 100 g Coriander Leaves
- 50g Everest Garam Masala
- 250 g French Beans
- - Green Peas
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Rinse the basmati rice thoroughly and soak it for 30 minutes. Drain and set aside.
- 2. Heat 2 tablespoons of vegetable oil in a large pan. Add bay leaves, cloves, cardamom, and cinnamon stick, sautéing for 1 minute until aromatic.
- 3. Stir in asafoetida, turmeric powder, red chili powder, and garam masala, then add chopped tomatoes. Cook for 5-7 minutes until the tomatoes turn soft and release their juices.
- 4. Add the chopped capsicum, cauliflower, green peas, and green beans to the pan. Stir well and cook for another 5-7 minutes until the vegetables are partially tender.
- 5. In a separate pot, boil the soaked rice with salt until 70% cooked, then drain and set aside.
- 6. Layer the partially cooked rice over the vegetable mixture in the pan. Sprinkle chopped coriander and mint leaves on top.
- 7. Cover the pan with a tight-fitting lid and cook on low heat for 20 minutes, allowing the rice and vegetables to steam and absorb the flavors.
- 8. Once done, gently fluff the biryani with a fork to mix the layers. Serve warm and enjoy with raita or a simple salad.
