Ingredients

  • 1 kg Basmati Rice
  • 500 g Tomato - Hybrid
  • 1 head Cauliflower
  • 1Bunch Pudina
  • 100G Oleo
  • 100 g Tej Patta
  • 100 g Garlic
  • 100 g Dalchini (Cassia )
  • 500 g Capsicum Green
  • 20 g Cardamom Green
  • 50 g Asafoetida Powder
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 250 g French Beans
  • - Green Peas
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the basmati rice thoroughly and soak it for 30 minutes. Drain and set aside.
  2. 2. Heat 2 tablespoons of vegetable oil in a large pan. Add bay leaves, cloves, cardamom, and cinnamon stick, sautéing for 1 minute until aromatic.
  3. 3. Stir in asafoetida, turmeric powder, red chili powder, and garam masala, then add chopped tomatoes. Cook for 5-7 minutes until the tomatoes turn soft and release their juices.
  4. 4. Add the chopped capsicum, cauliflower, green peas, and green beans to the pan. Stir well and cook for another 5-7 minutes until the vegetables are partially tender.
  5. 5. In a separate pot, boil the soaked rice with salt until 70% cooked, then drain and set aside.
  6. 6. Layer the partially cooked rice over the vegetable mixture in the pan. Sprinkle chopped coriander and mint leaves on top.
  7. 7. Cover the pan with a tight-fitting lid and cook on low heat for 20 minutes, allowing the rice and vegetables to steam and absorb the flavors.
  8. 8. Once done, gently fluff the biryani with a fork to mix the layers. Serve warm and enjoy with raita or a simple salad.
