Instructions

  1. 1. In a large bowl, combine 1 1/4 cups mayonnaise, 2 tablespoons rice vinegar, 2 teaspoons tomato paste, 1 teaspoon sugar, 1 teaspoon garlic paste, 1/2 teaspoon paprika, and 1/4 teaspoon cayenne pepper. Whisk until smooth and refrigerate until needed.
  2. 2. Cook 16 oz udon noodles according to package instructions, drain, and set aside.
  3. 3. Prepare 1 cup of white rice according to package instructions and set aside.
  4. 4. In a medium saucepan, melt 3 cups butter over low heat and keep warm until needed.
  5. 5. Preheat a large skillet or wok over medium heat. Add 1 cup of the butter mixture and stir-fry 1 spring onion (sliced), 2 carrots (julienned), 3 zucchinis (sliced), and 1/2 head of broccoli (cut into florets) until the onions are soft but the carrots and zucchini retain some crunch. Remove the vegetables from the skillet and set aside.
  6. 6. In the same skillet, add another cup of the butter mixture and 1/2 tablespoon soy sauce. Add the cooked udon noodles and stir-fry until the liquid is absorbed by the noodles. Remove from the skillet and set aside.
  7. 7. Sprinkle 1 lb halal chicken breast (cut into bite-sized pieces) and 1 lb shrimp (peeled and deveined) with 1 tablespoon garlic paste. Add the remaining butter mixture to the skillet and cook the chicken and shrimp until fully cooked through, about 5-7 minutes.
  8. 8. To serve, place the noodles on a plate, top with the cooked chicken and shrimp, and arrange the white rice and stir-fried vegetables on the side. Drizzle generously with the prepared white sauce.
  9. 9. Enjoy your delicious halal teppanyaki dinner!
