Ingredients
- 100 g Coconut Shredded
- 200 ml Ghee
- 200 g Khoa
- 100 G Cashews / Kaju 100 G
- 200 g Table Salt
- 500 g Wheat Flour / Maida
- 500 g Sugar
- Loose Cardamom
- 500 ml Water
Instructions
- 1. In a mixing bowl, combine 500g of fortune maida along with a pinch of Keya table salt. Add in 100ml of melted Mother Dairy cow ghee, mixing it with your fingers until it forms a crumbly texture.
- 2. Gradually add water to the mixture and knead into a soft dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
- 3. In a pan, heat 50ml of Mother Dairy cow ghee and roast 250g of elite roasted rava until it turns golden brown and aromatic. Set aside to cool.
- 4. In a large bowl, mix the roasted rava with 200g of Milky Mist khova, 100g of Freshcon shredded coconut, 100g of finely chopped Fab green chilli cashews, 100g of finely chopped Tong garden almonds, 50g of Zoff poppy seeds, 200g of Madhur sugar, and 1 tsp of Katdare green cardamom powder.
- 5. Divide the dough into small, equal portions and roll each into a small ball. Flatten each ball into a small disc, about 3-4 inches in diameter.
- 6. Place 1-2 tablespoons of the prepared filling onto one half of the disc, then fold over the other half to cover the filling. Seal the edges by pressing gently with your fingers or using a fork, forming a half-moon shape.
- 7. Heat enough Mother Dairy cow ghee in a deep pan for frying over medium heat. Once hot, carefully fry the gujiyas in batches until they are golden brown and crispy.
- 8. Remove the gujiyas with a slotted spoon and place them on paper towels to drain any excess ghee. Let them cool completely before serving.
