Ingredients
- 1 kg Rice
- 500 g Urad Dal
- 200 g Dahi
- 2 pcs Zucchini
- 250 g Carrot
- 100 g Coriander Leaves
- 1 box Baking Soda
- 200 ml Mustard Oil
- 50G Green Chilies
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 1 kg Yellow Moong Dal
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse and soak the rice, moong dal, and urad dal in water for 6-8 hours or overnight.
- 2. Drain the soaked mixture and grind it into a coarse batter using minimal water. Transfer to a large bowl.
- 3. Mix in yogurt, turmeric powder, red chili powder, grated zucchini, grated carrot, chopped green chilies, fresh coriander, and salt into the batter.
- 4. Heat oil in a small pan and add mustard seeds and cumin seeds. Let them splutter, then pour the tempered oil into the batter and mix well.
- 5. Preheat the oven to 180°C (356°F). Grease a baking dish with oil and line it with parchment paper.
- 6. Just before baking, add baking soda to the batter and mix gently but thoroughly. Pour the batter into the prepared dish and spread evenly.
- 7. Bake the Handvo for 35-40 minutes or until the top is golden brown and a toothpick inserted comes out clean.
- 8. Remove from the oven and allow it to cool slightly. Cut into pieces and serve warm with green chutney or ketchup.
