Ingredients

  • 1 kg Rice
  • 500 g Urad Dal
  • 200 g Dahi
  • 2 pcs Zucchini
  • 250 g Carrot
  • 100 g Coriander Leaves
  • 1 box Baking Soda
  • 200 ml Mustard Oil
  • 50G Green Chilies
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 1 kg Yellow Moong Dal
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse and soak the rice, moong dal, and urad dal in water for 6-8 hours or overnight.
  2. 2. Drain the soaked mixture and grind it into a coarse batter using minimal water. Transfer to a large bowl.
  3. 3. Mix in yogurt, turmeric powder, red chili powder, grated zucchini, grated carrot, chopped green chilies, fresh coriander, and salt into the batter.
  4. 4. Heat oil in a small pan and add mustard seeds and cumin seeds. Let them splutter, then pour the tempered oil into the batter and mix well.
  5. 5. Preheat the oven to 180°C (356°F). Grease a baking dish with oil and line it with parchment paper.
  6. 6. Just before baking, add baking soda to the batter and mix gently but thoroughly. Pour the batter into the prepared dish and spread evenly.
  7. 7. Bake the Handvo for 35-40 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  8. 8. Remove from the oven and allow it to cool slightly. Cut into pieces and serve warm with green chutney or ketchup.
