- 100 g Coriander Leaves
- 100 g Curry Leaves
- loose Ginger
- medium Chilli Green Long
- - Besan
- - Milky Mist Skyr Plain Yogurt
- 200 g Table Salt
- 50 g Asafoetida Powder
- 500 g Sugar
- 100 g Red Mustard Seeds
- 100 g Jeera
- 20 g Turmeric Powder
Instructions
- 1. In a mixing bowl, combine 1/2 cup of besan (gram flour) with 2 cups of plain yogurt (avoid using flavored ones like strawberry) and whisk until smooth.
- 2. Add 3 cups of water to the besan-yogurt mixture and whisk again to ensure there are no lumps.
- 3. Add 1/2 teaspoon of turmeric powder, 1 teaspoon of table salt, and 2 teaspoons of sugar. Mix well.
- 4. Heat 2 tablespoons of cooking oil in a pan over medium flame.
- 5. Add 1 teaspoon of red mustard seeds, 1 teaspoon of jeera (cumin seeds), and a pinch of asafoetida powder to the hot oil. Let them sizzle for a few seconds.
- 6. Add 2-3 green chillies (slit), 1 tablespoon of finely chopped ginger, a handful of curry leaves, and sauté for a minute.
- 7. Pour the besan-yogurt mixture into the pan. Stir continuously to prevent the mixture from curdling.
- 8. Let the kadhi simmer for 10-15 minutes until it thickens, stirring occasionally.
- 9. Garnish the kadhi with freshly chopped coriander leaves before serving.
