Ingredients
- 100 g Coriander Leaves
- 375G Real Thai Original Thai Cuisine Rice Stick Pad Thai Noodles (375g)
- 1 bunch Spring Onion
- 100 g Garlic
- loose Ginger
- 60 g Seasoning - All Purpose
- 90 g Dark Soy Sauce
- 200 g Table Salt
- 50 g White Pepper Powder
- 500 Ml Champion Oil
- 240G Fermented White Bean Curd, 240G
Instructions
- 1. Prepare the broth: In a large pot, add 1 liter of water, 200g of pork bones, 1 chicken carcass, 2 slices of ginger, and 2 cloves of garlic. Bring to a boil, then simmer for 1.5 hours. Skim off any impurities that rise to the surface.
- 2. Strain the broth into a clean pot, discarding the solids. Season the broth with 1 tsp salt, 1/2 tsp white pepper, and 1 tbsp soy sauce. Keep warm.
- 3. Prepare the toppings: Thinly slice 150g of pork belly and marinate with 1 tsp soy sauce, 1/2 tsp sugar, and 1/2 tsp cornstarch for 15 minutes. Heat 1 tbsp oil in a pan and stir-fry the pork until cooked. Set aside.
- 4. Boil 200g of rice noodles according to the package instructions until tender. Drain and rinse under cold water to prevent sticking.
- 5. Prepare the garnish: Finely chop 2 spring onions, 1/2 cup cilantro, and 1 red chili. Set aside.
- 6. Assemble the dish: Divide the cooked rice noodles into 2-3 serving bowls. Top each bowl with the cooked pork belly, 1 boiled egg (halved), and a handful of blanched bean sprouts.
- 7. Pour the hot broth over the noodles and toppings. Garnish with chopped spring onions, cilantro, and red chili.
- 8. Serve immediately with a side of chili oil or soy sauce for added flavor.
