Ingredients
- 250 g Spinach
- 500 g Tomato - Hybrid
- 500 g Toor Dal
- 200 g Dahi
- 1 Kg Lokwan Premium Wheat Atta 1 Kg
- 100G Oleo
- 100 g Jeera
- 20 g Turmeric Powder
- 100 g Red Chili Powder
- 50 g Asafoetida Powder
- 50g Everest Garam Masala
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
- 100 g Salt
- 100 g Coriander Leaves
Instructions
- 1. Prepare the dough for phulkas by mixing whole wheat flour, a pinch of salt, and water to form a soft, pliable dough. Cover and let it rest for 20 minutes.
- 2. In a pan, heat 1 tbsp oil and add cumin seeds, turmeric powder, red chili powder, and chopped spinach. Cook for 5 minutes until the spinach wilts. Add salt and set aside.
- 3. For the dal, heat 1 tbsp oil in another pan, add mustard seeds, asafoetida, and curry leaves. Once they splutter, add chopped tomatoes and cook until soft. Stir in the cooked toor dal, turmeric, and salt. Simmer for 10 minutes and finish with garam masala.
- 4. Roll the dough into thin discs and cook each on a hot tawa (griddle) until puffed and golden on both sides. Brush lightly with oil if desired.
- 5. For the raita, whisk yogurt with a pinch of salt and add finely chopped coriander. Keep it chilled until serving.
- 6. Assemble the thali by serving the dal, spinach vegetable, phulkas, and raita along with a garnish of fresh coriander.
