Ingredients

  • 1 Kg Lokwan Premium Wheat Atta 1 Kg
  • 200 ml Ghee
  • 100 g Hing Khoda
  • 200 g Dahi
  • 50 g Cumin Powder
  • 200 ml Mustard Oil
  • 1 pc (approx. 500 g to 800 g) Cabbage
  • 500 g Capsicum Green
  • 100 g Ajwain
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 100 g Red Chili Powder
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder

Instructions

  1. 1. In a mixing bowl, combine whole wheat flour, ghee, ajwain, turmeric powder, and a pinch of salt. Gradually add water to knead into a smooth dough. Cover and set aside for 20 minutes.
  2. 2. Heat oil in a pan and add hing. Sauté shredded cabbage, capsicum, and tomato for 3-4 minutes until softened. Add red chili powder, roasted cumin powder, garam masala, and salt. Cook for another 2 minutes. Turn off the heat and mix in fresh coriander leaves.
  3. 3. In a small bowl, whisk yogurt with a pinch of salt and roasted cumin powder to make a creamy masala sauce.
  4. 4. Divide the dough into small portions and roll out thin parathas. Heat a tawa (griddle) and cook each paratha on medium heat, applying a little ghee on both sides, until golden and cooked through.
  5. 5. Spread a thin layer of the yogurt masala sauce over each cooked paratha. Place a generous amount of the vegetable filling on one side and roll the paratha tightly to form a roll.
  6. 6. Serve the Golden Tawa Masala Paratha Rolls warm with a side of yogurt or mint chutney for dipping.
