  • - Vermicelli
  • 200 ml Mustard Oil
  • 500 g Onion
  • 250 g Carrot
  • 250 g French Beans
  • 100 g Coriander Leaves
  • 100 g Lemon
  • 500 g Capsicum Green
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 50g Everest Garam Masala
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat oil in a large pan over medium heat and add mustard seeds. Once they splutter, add curry leaves and sauté for 30 seconds.
  2. 2. Add the chopped onion and green chilies to the pan, cooking until the onion turns translucent.
  3. 3. Stir in the carrots, beans, and bell pepper. Sauté the vegetables for 4-5 minutes until slightly tender but still crisp.
  4. 4. Add turmeric powder, garam masala, and salt, stirring well to coat the vegetables with the spices.
  5. 5. Add the roasted vermicelli to the pan and mix well with the vegetables and spices.
  6. 6. Pour in enough boiling water to cover the vermicelli and stir. Cover the pan and cook on low heat until the vermicelli absorbs the water and turns soft, about 5-7 minutes.
  7. 7. Once cooked, sprinkle coriander leaves and drizzle lemon juice over the dish. Gently mix and serve warm.
