- 200 ml Mustard Oil
- 500 g Onion
- 250 g Carrot
- 250 g French Beans
- 100 g Coriander Leaves
- 100 g Lemon
- 500 g Capsicum Green
- medium Chilli Green Long
- 100 g Curry Leaves
- 50g Everest Garam Masala
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat oil in a large pan over medium heat and add mustard seeds. Once they splutter, add curry leaves and sauté for 30 seconds.
- 2. Add the chopped onion and green chilies to the pan, cooking until the onion turns translucent.
- 3. Stir in the carrots, beans, and bell pepper. Sauté the vegetables for 4-5 minutes until slightly tender but still crisp.
- 4. Add turmeric powder, garam masala, and salt, stirring well to coat the vegetables with the spices.
- 5. Add the roasted vermicelli to the pan and mix well with the vegetables and spices.
- 6. Pour in enough boiling water to cover the vermicelli and stir. Cover the pan and cook on low heat until the vermicelli absorbs the water and turns soft, about 5-7 minutes.
- 7. Once cooked, sprinkle coriander leaves and drizzle lemon juice over the dish. Gently mix and serve warm.
