Ingredients

  • 200 ml Ghee
  • 500 g Onion
  • 250 g Carrot
  • 100 g Salt
  • 500 g Sugar
  • 100 g Lemon
  • 500 g Suji
  • 500 g Tomato - Hybrid
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • - Green Peas
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat a pan on medium flame and dry roast the semolina for 3-4 minutes until it turns light golden and aromatic. Transfer to a plate and set aside.
  2. 2. In the same pan, heat ghee on medium flame. Add mustard seeds and let them splutter, then add curry leaves and green chili. Sauté for 1 minute.
  3. 3. Add the chopped onion and sauté until translucent. Stir in the turmeric powder, followed by the tomato, and cook until the tomato softens.
  4. 4. Add the chopped carrot and green peas. Stir well and cook for 2-3 minutes until the vegetables start to soften.
  5. 5. Add the roasted semolina to the pan and mix well with the vegetables. Season with salt and sugar, stirring to combine.
  6. 6. Gradually add hot water, stirring continuously to avoid lumps. Cook on low flame for 3-4 minutes until the semolina absorbs the water and the mixture thickens.
  7. 7. Turn off the heat, stir in the lemon juice, and garnish with chopped coriander leaves. Adjust seasoning if needed.
