- 200 g Paneer
- - Grated Coconut
- 500 g Onion
- - Coriander Powder
- 20 g Cinnamon
- 50 g Cloves
- 200G Adrak Lasun Paste (200g)
- 100G Oleo
- 100 g Badishep Big Premium
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
Instructions
- 1. Heat 1 tbsp of oil in a pan and lightly toast the grated coconut until golden brown. Remove from heat, let it cool, and blend into a smooth paste with a bit of water. Set aside.
- 2. In the same pan, heat the remaining oil and add the cinnamon, cloves, fennel seeds, and cumin seeds. Sauté until aromatic.
- 3. Add the chopped onion and green chilies to the pan and sauté until the onions turn translucent. Stir in the ginger-garlic paste and cook for another minute.
- 4. Add the chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes break down and the mixture becomes a thick paste.
- 5. Stir in the prepared coconut paste and cook for 2-3 minutes, allowing the flavors to meld together.
- 6. Add the mixed vegetables and a cup of water. Cover and simmer for 10 minutes, or until the vegetables are tender.
- 7. Add the paneer cubes, season with salt, and simmer for another 5 minutes to allow the paneer to absorb the flavors.
- 8. Garnish with freshly chopped coriander leaves and serve hot with steamed rice or dosa.
