Ingredients

  • 500 g Rava
  • 200 ml Ghee
  • 500 g Onion
  • 250 g French Beans
  • 100 g Salt
  • 100 g Coriander Leaves
  • 100 g Lemon
  • 250 g Carrot
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 100 g Jeera
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat a pan on medium flame and dry roast the semolina until it turns light golden and aromatic, stirring continuously to avoid burning. Transfer to a plate and set aside.
  2. 2. In the same pan, heat ghee and add mustard seeds. Once they start spluttering, add cumin seeds, curry leaves, and chopped green chili. Sauté for 30 seconds.
  3. 3. Add the chopped onion to the pan and sauté until translucent. Then, add the carrots and green beans, cooking for 2-3 minutes until they slightly soften.
  4. 4. Stir in turmeric powder and salt, mixing well to coat the vegetables with the spices.
  5. 5. Gradually add the roasted semolina to the pan, stirring continuously to combine with the vegetables and spices.
  6. 6. Slowly pour in the hot water while stirring to prevent lumps from forming. Cook on low heat, stirring occasionally, until the mixture thickens and the semolina absorbs the water.
  7. 7. Turn off the heat and mix in fresh coriander leaves and lemon juice for a burst of freshness. Adjust seasoning if needed.
