Ingredients
- 1 kg Basmati Rice
- 1 kg Yellow Moong Dal
- 200 ml Ghee
- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- - Frozen Peas
- - Red Chilli Powder
- 200Ml Kara Coconut Milk Classic (200ml)
- 100 g Salt
- medium Chilli Green Long
- - Coriander Powder
- 100 g Curry Leaves
- 250 g French Beans
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the rice and moong dal thoroughly and soak them in water for 20 minutes.
- 2. Heat ghee in a large pot over medium heat and add mustard seeds. Once they splutter, add curry leaves and green chili.
- 3. Sauté the chopped onion until translucent, then add the tomato and cook until softened.
- 4. Add diced carrots, beans, and peas, stirring well. Cook for 2-3 minutes.
- 5. Stir in turmeric powder, coriander powder, chili powder, and salt. Mix well to coat the vegetables in spices.
- 6. Drain the soaked rice and dal, and add them to the pot. Stir gently to combine.
- 7. Pour in enough water to cover the mixture, along with the coconut milk. Bring to a boil, then lower the heat to simmer.
- 8. Cover and cook for 20-25 minutes, stirring occasionally, until the rice and lentils are soft and the khichdi reaches a creamy consistency.
- 9. Adjust salt and garnish with additional curry leaves if desired. Serve hot.
