Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 200 ml Mustard Oil
  • 500 g Onion
  • 250 g Carrot
  • - Green Peas
  • - Vegetable Stock Cubes
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the millet thoroughly under running water and set aside to drain.
  2. 2. Heat oil in a deep pan or kadai over medium heat. Add mustard seeds and cumin seeds, letting them splutter for a few seconds.
  3. 3. Add curry leaves, green chili, and chopped onion. Sauté until the onion turns translucent.
  4. 4. Stir in the turmeric powder, red chili powder, and diced carrots. Cook for 2-3 minutes before adding tomatoes and green peas. Cook until the tomatoes soften.
  5. 5. Add the rinsed millet, mixing it well with the vegetables and spices. Toast the millet for 2 minutes to enhance its nutty flavor.
  6. 6. Pour in the vegetable stock and add salt. Stir well, cover the pan, and cook on low heat for 12-15 minutes until the millet absorbs the liquid and becomes tender.
  7. 7. Once cooked, fluff the millet with a fork and stir in chopped coriander leaves and lemon juice.
  8. 8. Serve hot, garnished with additional coriander leaves if desired.
