Ingredients
- 500G Poha (Flattened Rice)
- 200 ml Mustard Oil
- 50 g Asafoetida Powder
- - Frozen Peas
- 500 g Tomato - Hybrid
- 100 g Coriander Leaves
- 500 g Capsicum Green
- 100 g Curry Leaves
- 500g Good Life Raw Peanuts 500 G
- 50G Green Chilies
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the poha under running water in a colander until it softens, then let it drain completely.
- 2. Heat oil in a large pan over medium heat and add mustard seeds. Once they start to splutter, add asafoetida, curry leaves, and green chilies. Sauté for 1-2 minutes.
- 3. Add turmeric powder, green peas, capsicum, and tomatoes. Cook for 3-4 minutes until the vegetables are tender but still firm.
- 4. Lower the heat and add the softened poha and salt. Mix everything gently to combine and ensure the poha is evenly coated with the spices.
- 5. Cover the pan and let the poha steam for 2-3 minutes on low heat. Turn off the heat and stir in the lemon juice.
- 6. Garnish with roasted peanuts and freshly chopped coriander leaves. Serve hot and enjoy!
