Ingredients

  • 200 g Pickle - Maharashtra Mango
  • 500 g Curd
  • 1 head Cauliflower
  • 100 Ml Govind Ghee
  • 1 l Refined Soyabean Oil
  • 200 g Table Salt
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • Pcs Ajwain 50g

Instructions

  1. 1. In a large bowl, mix 1 cup of whole wheat flour, 1/4 tsp salt, and 1/4 tsp ajwain seeds. Gradually add water and knead into a soft, pliable dough. Cover and rest for 20 minutes.
  2. 2. Grate 1 cup of cauliflower (gobi) using a fine grater. Squeeze out excess water using a clean kitchen towel.
  3. 3. Heat 1 tsp of oil in a pan on medium flame. Add 1/2 tsp cumin seeds. Once they crackle, add the grated cauliflower, 1/4 tsp turmeric powder, 1/2 tsp red chili powder, 1/2 tsp garam masala, and a pinch of salt. Stir and cook for 2-3 minutes until dry. Let it cool completely.
  4. 4. Divide the dough into 4 equal portions and roll each into a ball. Flatten each ball slightly and roll it out into a small disc about 3 inches in diameter.
  5. 5. Place 2-3 tbsp of the cooled cauliflower filling in the center of the disc. Gather the edges of the dough to seal the filling completely, pinching off any excess dough.
  6. 6. Gently roll out the stuffed ball into a flat paratha, about 6-7 inches in diameter, being careful not to tear it.
  7. 7. Heat a tawa (griddle) on medium flame. Place the rolled paratha on the hot tawa and cook for 1-2 minutes until brown spots appear on the bottom. Flip and cook the other side, applying 1/2 tsp of ghee or oil on both sides, until golden and crispy.
  8. 8. Repeat the process with the remaining dough and filling. Serve hot with curd and pickle.
