Ingredients

  • 500 g Rava
  • 1 liter Sunflower Oil
  • 100 g Curry Leaves
  • 100 g Jeera
  • 100 g Yellow Mustard Seeds
  • 500 g Onion
  • 250 g Carrot
  • 100 g Coriander Leaves
  • 250 g French Beans
  • 50G Green Chilies
  • - Green Peas
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Heat a dry pan on medium heat and roast the semolina for 5-7 minutes until aromatic and lightly golden. Transfer it to a plate and set aside.
  2. 2. In the same pan, heat vegetable oil on medium heat. Add mustard seeds and let them splutter, then add cumin seeds, curry leaves, and chopped green chilies. Sauté for 1 minute.
  3. 3. Add the finely chopped onion and sauté until translucent. Stir in the diced carrot, green peas, and chopped beans. Cook for 4-5 minutes until the vegetables are tender.
  4. 4. Add turmeric powder and mix well. Pour 2.5 cups of hot water into the pan and season with salt. Bring the mixture to a gentle boil.
  5. 5. Gradually add the roasted semolina while stirring continuously to avoid lumps. Reduce the heat to low and cook for 3-4 minutes until the semolina absorbs the water and reaches a soft, fluffy consistency.
  6. 6. Turn off the heat, add lemon juice, and mix well. Garnish with freshly chopped coriander leaves and serve warm.
