  • 100 g Coriander Leaves
  • 1 kg Bell Peppers
  • 2 pcs Zucchini
  • 500 g Tomato - Hybrid
  • 500 g Black Beans
  • 1 kg Basmati Rice
  • - Olive Oil
  • 50 g Cumin Powder
  • 30 g Smoked Paprika Powder
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 100 g Salt

Instructions

  1. 1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the asafoetida, cumin powder, smoked paprika, turmeric powder, and red chili powder. Toast the spices for 30 seconds until fragrant.
  2. 2. Add the sliced bell peppers and zucchini to the pan. Sprinkle a pinch of salt and sauté for 5-7 minutes until the vegetables are tender but still slightly crisp.
  3. 3. Stir in the diced tomatoes and cooked black beans. Cook for another 3-4 minutes, allowing the flavors to meld together.
