Ingredients

  • 1 kg Basmati Rice
  • 4 pcs approx (500g-650g) Apple Green
  • 100 g Almonds
  • - Tata Sampann 100% Pure Premium Cashews Whole Premium Quality Kaju Rich In Protein, Magnesium, And Phosphorus
  • 500 g Sugar
  • Pcs Saffron
  • Loose Cardamom

Instructions

  1. 1. Gather all ingredients: 1 cup basmati rice, 2 cups almond milk (or any plant-based milk), 1/4 cup sugar, 1/4 tsp cardamom powder, 1/4 cup chopped apples (peeled), 1/4 cup chopped pears (peeled), 1/4 cup seedless grapes (halved), 2 tbsp chopped almonds, 2 tbsp chopped cashews, and a pinch of saffron strands.
  2. 2. Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  3. 3. In a medium-sized pot, add the drained rice and almond milk. Bring to a gentle boil over medium heat, stirring occasionally.
  4. 4. Once the mixture starts boiling, reduce the heat to low and let it simmer. Stir frequently to prevent the rice from sticking to the bottom of the pot.
  5. 5. Cook the rice for about 20-25 minutes or until it becomes soft and the mixture thickens to a porridge-like consistency.
  6. 6. Add the sugar and cardamom powder to the rice mixture. Stir well until the sugar dissolves completely.
  7. 7. Remove the pot from the heat and let the kheer cool to room temperature.
  8. 8. While the kheer is cooling, prepare the fruits. Peel and chop the apples and pears into small cubes. Halve the seedless grapes.
  9. 9. Dry roast the chopped almonds and cashews in a small pan over low heat for 2-3 minutes until they turn lightly golden. Set aside to cool.
  10. 10. Once the kheer has cooled, assemble the parfait. Take serving glasses or bowls and start layering.
  11. 11. Add a layer of the cooled rice kheer at the bottom of each glass or bowl.
  12. 12. Add a layer of mixed chopped fruits (apples, pears, and grapes) on top of the kheer.
  13. 13. Sprinkle a portion of the roasted almonds and cashews over the fruit layer.
  14. 14. Repeat the layers until the glasses or bowls are filled, ending with a layer of kheer on top.
  15. 15. Garnish the top layer with a few saffron strands for added flavor and visual appeal.
  16. 16. Chill the assembled parfaits in the refrigerator for at least 1 hour before serving.
  17. 17. Serve the fruity rice kheer parfait cold as a refreshing and delicious dessert.
