Ingredients

  • 1 kg Rice
  • 500 g Chana Dal
  • 500 g Urad Dal
  • 1 piece Bottle Gourd
  • 250 g Carrot
  • 300 g Ginger Paste
  • 1 pc (approx. 500 g to 800 g) Cabbage
  • 50G Green Chilies
  • 1 kg Yellow Moong Dal
  • 200 g Dahi
  • 250 ml Olive Oil
  • 1 box Baking Soda
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Wash and soak rice, moong dal, chana dal, and urad dal together for 6 hours or overnight. Drain and blend into a smooth batter using minimal water.
  2. 2. In a large mixing bowl, combine the batter with grated bottle gourd, carrot, cabbage, green chilies, ginger paste, turmeric powder, red chili powder, yogurt, and salt. Mix well to form a thick, lump-free batter.
  3. 3. Just before cooking, stir in the baking soda and mix gently to aerate the batter.
  4. 4. Heat a tawa or flat griddle on medium flame and add 1 tbsp oil. Sprinkle cumin and mustard seeds and let them crackle.
  5. 5. Pour a ladleful of batter onto the tawa, spreading it gently into a thick pancake. Cover and cook for 3-4 minutes until the bottom turns golden and crispy.
  6. 6. Flip the handvo carefully and cook the other side uncovered for another 3-4 minutes, adding a little oil if needed.
  7. 7. Repeat the process for the remaining batter, adjusting oil as necessary. Serve hot with green chutney or yogurt on the side.
