- 200 g Dahi
- - Tandoori Seasoning 50g
- 1 box Baking Soda
- 200G Adrak Lasun Paste (200g)
- 100 g Curry Leaves
- 250 ml Olive Oil
- 100 g Coriander Leaves
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 100 g Til
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. In a mixing bowl, combine gram flour, curd, turmeric powder, red chili powder, tandoori masala, ginger-green chili paste, lemon juice, and salt. Gradually mix in water to make a smooth, lump-free batter.
- 2. Let the batter rest for 10 minutes, then stir in baking soda and eno fruit salt. Mix gently but quickly to incorporate air into the batter.
- 3. Grease a dhokla steaming tray or a flat-bottomed pan with oil. Pour the batter into the tray and steam in a preheated steamer for 15-20 minutes or until a skewer comes out clean.
- 4. Heat cooking oil in a small pan. Add mustard seeds, curry leaves, and sesame seeds, allowing them to splutter. Pour this tempering over the steamed dhokla.
- 5. Cut the dhokla into squares or diamonds, garnish with chopped coriander, and serve warm with chutney or a fresh side salad.
