Ingredients

  • - Besan
  • 200 g Dahi
  • - Tandoori Seasoning 50g
  • 1 box Baking Soda
  • 200G Adrak Lasun Paste (200g)
  • 100 g Curry Leaves
  • 250 ml Olive Oil
  • 100 g Coriander Leaves
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 100 g Til
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. In a mixing bowl, combine gram flour, curd, turmeric powder, red chili powder, tandoori masala, ginger-green chili paste, lemon juice, and salt. Gradually mix in water to make a smooth, lump-free batter.
  2. 2. Let the batter rest for 10 minutes, then stir in baking soda and eno fruit salt. Mix gently but quickly to incorporate air into the batter.
  3. 3. Grease a dhokla steaming tray or a flat-bottomed pan with oil. Pour the batter into the tray and steam in a preheated steamer for 15-20 minutes or until a skewer comes out clean.
  4. 4. Heat cooking oil in a small pan. Add mustard seeds, curry leaves, and sesame seeds, allowing them to splutter. Pour this tempering over the steamed dhokla.
  5. 5. Cut the dhokla into squares or diamonds, garnish with chopped coriander, and serve warm with chutney or a fresh side salad.
