Ingredients

  • 500 Grms Ragi / Nachni Atta Millets Atta 500 Grms
  • - Rice Flour
  • 200 g Dahi
  • 1 box Baking Soda
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 50G Green Chilies
  • 100 g Coriander Leaves
  • 1 liter Sunflower Oil
  • 250 g Carrot
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. In a large mixing bowl, combine ragi flour, rice flour, yogurt, and baking soda. Gradually add water to make a smooth batter of pouring consistency, then cover and let it rest for 20 minutes.
  2. 2. Prepare the vegetable topping by mixing chopped onions, tomatoes, grated carrot, green chilies, coriander leaves, cumin seeds, turmeric powder, and salt in a separate bowl.
  3. 3. Heat a flat non-stick pan or tava over medium heat and lightly grease it with oil. Pour a ladleful of batter onto the pan and spread it gently to form a thick circle.
  4. 4. Quickly sprinkle a generous amount of the prepared vegetable mixture on top of the batter, pressing it lightly with a spatula to ensure it sticks.
  5. 5. Cook the uttapam on medium heat for 2-3 minutes until the bottom turns golden brown. Flip carefully and cook the other side for another 2-3 minutes until cooked through.
  6. 6. Remove the uttapam from the pan and repeat the process with the remaining batter and topping.
