Ingredients

- 200 ml Sesame Oil
- 100 g Curry Leaves
- 100 g Coriander Leaves
- 50G Green Chilies
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. In a large bowl, mix the rice flour and a pinch of salt. Gradually add hot water and knead into a soft, smooth dough.
- 2. Fill an idiyappam maker with the dough and press it into greased idli plates or idiyappam plates to form noodle-like strands.
- 3. Steam the idiyappam in a steamer for 8-10 minutes until cooked and fluffy, then set aside to cool slightly.
- 4. Heat sesame oil in a pan over medium heat, add mustard seeds and let them splutter. Stir in cumin seeds, curry leaves, and green chilies, sautéing for 1-2 minutes until fragrant.
- 5. Add turmeric powder and grated coconut to the pan, stirring well to combine, and cook for another 2-3 minutes to toast the coconut lightly.
- 6. Gently mix the steamed idiyappam with the spiced coconut mixture, ensuring even coating. Adjust salt as needed.
- 7. Garnish with freshly chopped coriander leaves and serve warm as a wholesome breakfast.
