Ingredients
- 500 g Tomato - Hybrid
- 200 g Dahi
- 500 g Capsicum Green
- - Besan
- 250 g Carrot
- 250 g Spinach
- 100 g Yellow Mustard Seeds
- - Coriander Powder
- 200 ml Mustard Oil
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Preheat your oven to 180°C (350°F) and lightly grease a baking dish.
- 2. Crumble the idlis into bite-sized pieces and set aside.
- 3. Heat oil in a pan on medium heat, then add mustard seeds and cumin seeds. Let them splutter for about 30 seconds.
- 4. Add the chopped spinach, bell peppers, grated carrots, and tomatoes to the pan. Sauté for 5-7 minutes until the vegetables are soft.
- 5. Stir in the coriander powder, turmeric powder, red chili powder, garam masala, and salt. Cook for another 2 minutes until fragrant.
- 6. In a mixing bowl, whisk together yogurt, chickpea flour, and 1/4 cup water to make a smooth batter. Add a pinch of salt and mix it with the cooked vegetable masala.
- 7. Add the crumbled idlis to the vegetable mixture and toss gently to coat them evenly with the masala.
- 8. Transfer the idli and vegetable mixture to the greased baking dish, spreading it out evenly.
- 9. Bake in the preheated oven for 20-25 minutes until the top is lightly golden and the edges are crisp.
- 10. Serve warm, garnished with fresh cilantro or a dollop of yogurt on the side, if desired.
