Ingredients

  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 500 g Capsicum Green
  • - Besan
  • 250 g Carrot
  • 250 g Spinach
  • 100 g Yellow Mustard Seeds
  • - Coriander Powder
  • 200 ml Mustard Oil
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Preheat your oven to 180°C (350°F) and lightly grease a baking dish.
  2. 2. Crumble the idlis into bite-sized pieces and set aside.
  3. 3. Heat oil in a pan on medium heat, then add mustard seeds and cumin seeds. Let them splutter for about 30 seconds.
  4. 4. Add the chopped spinach, bell peppers, grated carrots, and tomatoes to the pan. Sauté for 5-7 minutes until the vegetables are soft.
  5. 5. Stir in the coriander powder, turmeric powder, red chili powder, garam masala, and salt. Cook for another 2 minutes until fragrant.
  6. 6. In a mixing bowl, whisk together yogurt, chickpea flour, and 1/4 cup water to make a smooth batter. Add a pinch of salt and mix it with the cooked vegetable masala.
  7. 7. Add the crumbled idlis to the vegetable mixture and toss gently to coat them evenly with the masala.
  8. 8. Transfer the idli and vegetable mixture to the greased baking dish, spreading it out evenly.
