Ingredients
- 1 kg Rice
- 500 g Urad Dal
- 200 g Fenugreek Seeds
- 500 g Onion
- 500 g Tomato - Hybrid
- 100 g Coriander Leaves
- - Grated Coconut
- 200 ml Mustard Oil
- medium Chilli Green Long
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Wash and soak the rice, urad dal, and fenugreek seeds in separate bowls for 6 hours or overnight.
- 2. Grind the soaked rice and urad dal with fenugreek seeds into a smooth batter, adding water as needed. Mix both batters together, add salt, and let it ferment overnight or for 8 hours in a warm place.
- 3. Prepare the toppings by mixing the chopped onion, tomato, green chili, cilantro, cumin seeds, red chili powder, turmeric powder, and grated coconut in a bowl.
- 4. Heat a non-stick pan or griddle over medium heat and grease lightly with oil. Pour a ladleful of batter and spread it into a thick, small circle.
- 5. Sprinkle the prepared vegetable topping evenly over the batter and press gently. Drizzle a few drops of oil around the edges and cook for 2-3 minutes until the bottom is golden brown.
- 6. Flip the uttapam carefully and cook the other side for another 2-3 minutes until fully cooked. Remove from the pan and repeat for the remaining batter.
- 7. Serve the uttapams hot with coconut chutney and sambar for a wholesome, delicious breakfast.
