Ingredients

  • 500 g Rice
  • 500 g Urad Dal
  • 200 g Fenugreek Seeds
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 500 g Capsicum Green
  • 50G Green Chilies
  • 100 g Coriander Leaves
  • 100 g Red Chili Powder
  • 20 g Turmeric Powder
  • 100 g Jeera
  • 50 g Asafoetida Powder
  • 1 liter Sunflower Oil

Instructions

  1. 1. Wash the rice, urad dal, and fenugreek seeds separately, then soak them in water for 4-6 hours. Drain and grind them into a smooth batter, mixing salt into the batter. Leave it to ferment overnight or for 8-10 hours in a warm place.
  2. 2. Once the batter has fermented, stir it gently to combine. Heat a non-stick or cast-iron skillet over medium heat and lightly grease it with oil or ghee.
  3. 3. Pour a ladleful of batter onto the skillet and spread it gently to form a thick pancake. Keep the uttapam size medium for even cooking.
  4. 4. Sprinkle chopped tomatoes, bell peppers, green chilies, and coriander leaves evenly over the surface of the batter. Add a pinch of red chili powder, turmeric powder, and cumin seeds on top.
  5. 5. Drizzle a few drops of oil or ghee around the edges of the uttapam. Cook for 2-3 minutes on medium heat until the bottom turns golden brown.
  6. 6. Flip the uttapam carefully using a spatula and cook the other side for another 2 minutes until the vegetables are slightly cooked and the base is crisp.
  7. 7. Repeat the process with the remaining batter and topping ingredients. Serve the uttapams hot with coconut chutney and sambar for a delicious breakfast.
