Ingredients
- 500 Grms Ragi / Nachni Atta Millets Atta 500 Grms
- - Rice Flour
- 200 g Dahi
- 50 g Asafoetida Powder
- 250 ml Olive Oil
- 100 g Curry Leaves
- 50G Green Chilies
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. In a large mixing bowl, combine millet flour, rice flour, salt, and turmeric powder. Gradually add yogurt and mix to form a thick, smooth batter. Set aside for 15 minutes to rest.
- 2. Heat oil in a small pan over medium heat and add mustard seeds. Once they start to splutter, add curry leaves, green chilies, and asafoetida. Sauté for a minute until aromatic, then mix this tempering into the batter.
- 3. Just before steaming, sprinkle fruit salt (eno) over the batter and gently mix to incorporate, ensuring the batter becomes light and airy.
- 4. Grease the idli molds with a little oil and pour the batter into each mold, filling them about three-quarters full.
- 5. Steam the idlis in a steamer or pressure cooker (without the whistle) for 12-15 minutes on medium heat until they are cooked through and fluffy.
- 6. Allow the idlis to cool for a minute before carefully removing them from the molds. Serve warm with coconut chutney or sambar.
