Ingredients

  • 500 Grms Ragi / Nachni Atta Millets Atta 500 Grms
  • - Rice Flour
  • 200 g Dahi
  • 50 g Asafoetida Powder
  • 250 ml Olive Oil
  • 100 g Curry Leaves
  • 50G Green Chilies
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. In a large mixing bowl, combine millet flour, rice flour, salt, and turmeric powder. Gradually add yogurt and mix to form a thick, smooth batter. Set aside for 15 minutes to rest.
  2. 2. Heat oil in a small pan over medium heat and add mustard seeds. Once they start to splutter, add curry leaves, green chilies, and asafoetida. Sauté for a minute until aromatic, then mix this tempering into the batter.
  3. 3. Just before steaming, sprinkle fruit salt (eno) over the batter and gently mix to incorporate, ensuring the batter becomes light and airy.
  4. 4. Grease the idli molds with a little oil and pour the batter into each mold, filling them about three-quarters full.
  5. 5. Steam the idlis in a steamer or pressure cooker (without the whistle) for 12-15 minutes on medium heat until they are cooked through and fluffy.
  6. 6. Allow the idlis to cool for a minute before carefully removing them from the molds. Serve warm with coconut chutney or sambar.
