Ingredients

  • 1 Kg Idly/Dosa Batter
  • 1Kg Potato
  • 500 g Onion
  • 100G Oleo
  • 200 g Dahi
  • 100 G Lasun Khobra Chutney
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat vegetable oil in a pan over medium heat and add mustard seeds, cumin seeds, and curry leaves. Sauté until they crackle and release their aroma.
  2. 2. Add the finely chopped onion and green chili to the pan, and sauté until the onions become soft and translucent, about 2-3 minutes.
  3. 3. Stir in turmeric powder, red chili powder, and salt, then add the boiled and mashed potatoes. Mix well until the spices are evenly distributed. Cook for 2-3 minutes and finish with chopped coriander leaves. Set aside.
  4. 4. Heat a non-stick pan or dosa tawa over medium heat. Pour a ladle of dosa batter onto the pan and spread it in a thin, circular shape to form a dosa. Drizzle a few drops of oil around the edges.
  5. 5. Cook the dosa until the underside is golden and crispy, about 2 minutes. Do not flip. Place a portion of the spiced potato filling in the center of the dosa.
  6. 6. Fold the dosa into a wrap or roll, enclosing the filling. Remove from the pan and repeat with the remaining batter and filling.
