Ingredients
- 1 Kg Idly/Dosa Batter
- 1Kg Potato
- 500 g Onion
- 100G Oleo
- 200 g Dahi
- 100 G Lasun Khobra Chutney
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat vegetable oil in a pan over medium heat and add mustard seeds, cumin seeds, and curry leaves. Sauté until they crackle and release their aroma.
- 2. Add the finely chopped onion and green chili to the pan, and sauté until the onions become soft and translucent, about 2-3 minutes.
- 3. Stir in turmeric powder, red chili powder, and salt, then add the boiled and mashed potatoes. Mix well until the spices are evenly distributed. Cook for 2-3 minutes and finish with chopped coriander leaves. Set aside.
- 4. Heat a non-stick pan or dosa tawa over medium heat. Pour a ladle of dosa batter onto the pan and spread it in a thin, circular shape to form a dosa. Drizzle a few drops of oil around the edges.
- 5. Cook the dosa until the underside is golden and crispy, about 2 minutes. Do not flip. Place a portion of the spiced potato filling in the center of the dosa.
- 6. Fold the dosa into a wrap or roll, enclosing the filling. Remove from the pan and repeat with the remaining batter and filling.
- 7. Serve the fluffy masala dosa wraps warm with a side of coconut chutney and plain yogurt.
