Ingredients

  • 1 kg Idli Rice
  • 500 g Urad Dal
  • 200 g Dahi
  • 20 g Cardamom Powder
  • 200 g Fenugreek Seeds
  • 100 g Jeera
  • 250 g Carrot
  • 500 g Capsicum Green
  • 1 box Baking Soda
  • 200 ml Mustard Oil
  • medium Chilli Green Long
  • 100 g Salt

Instructions

  1. 1. Rinse and soak the idli rice, urad dal, and fenugreek seeds in separate bowls for 6 hours or overnight.
  2. 2. Drain the water and grind the rice and dal together into a smooth batter, adding water gradually to reach a thick but pourable consistency.
  3. 3. Transfer the batter to a large bowl, mix in the yogurt, cover, and let it ferment in a warm place for 8-10 hours or until it doubles in volume.
  4. 4. Once fermented, gently fold in the cardamom powder, cumin seeds, green chili, grated carrot, finely chopped bell peppers, and salt.
  5. 5. Grease a deep steaming tray or cake pan with oil and pour the batter into it, filling it about 3/4 of the way. Sprinkle baking soda on top and gently mix it into the batter just before steaming.
  6. 6. Heat a steamer with water and place the tray inside. Steam the idli cake on medium heat for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. 7. Remove the tray from the steamer and let it cool for 5 minutes. Carefully invert the cake onto a plate and cut it into wedges or slices.
  8. 8. Serve warm with coconut chutney or spicy tomato chutney for a wholesome and flavorful breakfast.
