Ingredients
- 200 g Paneer
- 1 head Cauliflower
- 250 g Carrot
- 250 g French Beans
- 500 g Tomato - Hybrid
- 500 g Onion
- - Grated Coconut
- 100G Oleo
- 100 g Coriander Leaves
- 1 kg Bell Peppers
- 100 g Curry Leaves
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat 2 tbsp vegetable oil on a tawa or flat pan over medium heat and add mustard seeds along with curry leaves. Sauté until aromatic.
- 2. Add finely chopped onions and cook until golden brown. Stir in turmeric powder and the Chettinad spice mix, sautéing for 1-2 minutes.
- 3. Add the chopped tomatoes and cook until they soften and release their juices, forming a thick base.
- 4. Stir in the grated coconut and mix well, allowing it to infuse with the spices for 1 minute.
- 5. Add the cauliflower, carrots, bell peppers, and green beans. Cook for 8-10 minutes, stirring occasionally, until the vegetables are tender yet retain a slight crunch.
- 6. Gently fold in the paneer cubes and allow them to absorb the flavors for 2-3 minutes.
- 7. Adjust salt to taste, garnish with chopped coriander leaves, and serve hot with rotis or dosas.
