Ingredients
- 500 g Tomato - Hybrid
- 500 g Onion
- medium Chilli Green Long
- 100 g Coriander Leaves
- 250 ml Olive Oil
- 250 ml Lemon Juice Concentrate
- 500 g Capsicum Green
- - Coriander Powder
- 50 g Cumin Powder
- 50g Everest Garam Masala
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat 2 tablespoons of cooking oil on a tawa or flat pan over medium heat. Add mustard seeds and let them splutter.
- 2. Add finely chopped onion and sauté until golden brown. Mix in the green chilies and diced capsicum, and cook for another 2-3 minutes.
- 3. Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook until the tomatoes soften and the oil starts to separate, roughly 5-6 minutes.
- 4. Add the quartered idlis to the masala mixture and gently toss to coat them evenly. Cook for 2-3 minutes, ensuring the idlis soak up the flavors.
- 5. Sprinkle garam masala and drizzle lemon juice over the idlis. Mix gently to combine, then turn off the heat.
- 6. Garnish with freshly chopped coriander leaves and serve hot with a side of coconut chutney or enjoy as is.
