Ingredients

  • 500 g Tomato - Hybrid
  • 500 g Onion
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 250 ml Olive Oil
  • 250 ml Lemon Juice Concentrate
  • 500 g Capsicum Green
  • - Coriander Powder
  • 50 g Cumin Powder
  • 50g Everest Garam Masala
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat 2 tablespoons of cooking oil on a tawa or flat pan over medium heat. Add mustard seeds and let them splutter.
  2. 2. Add finely chopped onion and sauté until golden brown. Mix in the green chilies and diced capsicum, and cook for another 2-3 minutes.
  3. 3. Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook until the tomatoes soften and the oil starts to separate, roughly 5-6 minutes.
  4. 4. Add the quartered idlis to the masala mixture and gently toss to coat them evenly. Cook for 2-3 minutes, ensuring the idlis soak up the flavors.
  5. 5. Sprinkle garam masala and drizzle lemon juice over the idlis. Mix gently to combine, then turn off the heat.
  6. 6. Garnish with freshly chopped coriander leaves and serve hot with a side of coconut chutney or enjoy as is.
