  • - Coconut Oil
  • 500 g Onion
  • medium Chilli Green Long
  • 500 g Tomato - Hybrid
  • 250 g Carrot
  • - Green Peas
  • 50 g Masala Sambhar
  • 200Ml Kara Coconut Milk Classic (200ml)
  • - Rice Flour
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 250 g French Beans
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. In a bowl, mix rice flour, salt, and a little coconut oil. Gradually add hot water while stirring to form a smooth, soft dough.
  2. 2. Fill the dough into an idiyappam press and press it onto greased idli plates or a steamer tray. Steam the idiyappam for 10-12 minutes until cooked through. Set aside.
  3. 3. Heat the remaining coconut oil in a pan. Add mustard seeds and let them splutter. Then add curry leaves, chopped onion, and green chili, sautéing until the onions are soft and translucent.
  4. 4. Add the chopped tomato and cook until it turns mushy. Stir in the diced carrots, beans, and green peas, mixing well.
  5. 5. Sprinkle turmeric powder and sambar powder over the vegetables, stirring to coat them evenly with the spices. Cook for 2-3 minutes.
  6. 6. Pour in the coconut milk and simmer the curry for 5-7 minutes, allowing the vegetables to cook through and the flavors to meld.
  7. 7. Garnish the curry with fresh coriander leaves and serve it hot alongside the steamed idiyappam.
