Ingredients
- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- - Green Peas
- 200 ml Ghee
- 100 g Lemon
- 500 g Rava
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Dry roast the semolina in a tawa on medium heat for 4-5 minutes until it turns light golden and aromatic. Set aside.
- 2. Heat ghee in the tawa, add mustard seeds, cumin seeds, and curry leaves, and let them splutter for 30 seconds.
- 3. Add chopped onion and green chilies, and sauté for 2-3 minutes until the onions turn translucent.
- 4. Stir in the tomato, carrot, and green peas. Cook for 4-5 minutes until the vegetables soften slightly.
- 5. Add turmeric powder, red chili powder, and salt, and mix well. Cook for another 1-2 minutes to blend the spices.
- 6. Gradually add roasted semolina to the vegetable mixture, stirring constantly to prevent lumps.
- 7. Slowly pour in 500ml boiling water (add in batches) while stirring to combine. Cook on low heat, stirring occasionally, until the semolina absorbs the water and the mixture thickens.
- 8. Turn off the heat, garnish with fresh coriander leaves, and squeeze lemon juice over the upma before serving.
