Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 500 g Onion
  • 50 g Masala Sambhar
  • - Grated Coconut
  • 250 ml Lemon Juice Concentrate
  • 200 ml Ghee
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the foxtail millet thoroughly under running water and soak it in water for 20 minutes. Drain and set aside.
  2. 2. Heat 2 tablespoons of ghee or oil in a large pan on medium heat. Add mustard seeds, cumin seeds, and curry leaves. Let them splutter for a few seconds.
  3. 3. Add the chopped onion and green chilies to the pan. Sauté until the onion turns translucent.
  4. 4. Stir in the mixed vegetables, turmeric powder, and sambar powder. Mix well and cook for 3-4 minutes.
  5. 5. Add the foxtail millet to the pan and mix until well combined with the vegetables and spices.
  6. 6. Pour in 2.5 cups of water and add salt. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 15-20 minutes, or until the millet is cooked and the water is absorbed.
  7. 7. Once cooked, fluff the millet gently with a fork. Add grated coconut, lemon juice, and chopped coriander leaves. Mix well.
  8. 8. Serve hot as a wholesome breakfast, garnished with additional coriander leaves if desired.
