Ingredients

  • 200Ml Kara Coconut Milk Classic (200ml)
  • 500 g Tomato - Hybrid
  • 500 g Onion
  • - Dry Red Chillies
  • 100G Oleo
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 100 g Curry Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder
  • 1 kg Yellow Moong Dal
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the moong dal thoroughly under running water until the water runs clear, then set aside.
  2. 2. Heat vegetable oil in a large pan over medium heat. Add mustard seeds and let them splutter, followed by cumin seeds, dried red chilies, and curry leaves. Stir for 30 seconds until fragrant.
  3. 3. Add the chopped onion and sauté until golden brown. Then add the chopped tomatoes and cook for 5-7 minutes until softened.
  4. 4. Stir in turmeric powder, coriander powder, and garam masala, cooking for another 1-2 minutes to bloom the spices.
  5. 5. Add the rinsed moong dal to the pan and mix well with the spices and vegetables. Pour in enough water to cover the lentils and bring to a boil.
  6. 6. Reduce the heat to low, cover the pan, and simmer for 20-25 minutes until the lentils are tender and fully cooked.
  7. 7. Stir in the coconut milk and salt, then simmer for an additional 5 minutes to allow the flavors to meld.
  8. 8. Garnish with freshly chopped cilantro if desired, and serve hot with dosa, idli, or steamed rice.
