  • 500 g Rava
  • 400 g Curd
  • 1 box Baking Soda
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 250 g Carrot
  • 200 ml Mustard Oil
  • 500 g Capsicum Green
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. In a mixing bowl, combine the semolina, curd, and water to form a smooth batter. Let it rest for 15 minutes.
  2. 2. Add the baking soda, salt, turmeric powder, and red chili powder to the rested batter. Mix well to incorporate.
  3. 3. Prepare the vegetable topping by combining the onion, tomato, green chili, carrot, capsicum, and coriander leaves in a separate bowl.
  4. 4. Heat a non-stick pan or tawa on medium heat and lightly grease it with oil.
  5. 5. Pour a ladleful of the batter onto the pan and spread it gently into a round uttapam shape, about 1/4-inch thick.
  6. 6. Sprinkle a generous amount of the vegetable mixture evenly over the top of the batter. Press gently to ensure the vegetables stick.
  7. 7. Drizzle a few drops of oil around the edges and cook on medium heat until the bottom is golden brown and crisp, about 2-3 minutes.
  8. 8. Flip the uttapam carefully and cook the other side for another 2 minutes until the vegetables are slightly caramelized and the uttapam is cooked through.
  9. 9. Repeat the process with the remaining batter and vegetable mix, greasing the pan as needed.
  10. 10. Serve the masala rava uttapam hot with coconut chutney or tomato chutney for a perfect breakfast experience.
