Ingredients

  • 1 kg Basmati Rice
  • 200 g Dahi
  • 200 g Paneer
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 ml Ghee
  • 100G Oleo
  • 100G Biryani Masala (100g)
  • 100 g Garlic
  • 1Bunch Pudina
  • 100 g Coriander Leaves
  • 20 g Cardamom Green
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 100 g Tej Patta
  • 20 g Turmeric Powder

Instructions

  1. 1. Wash and soak the basmati rice in water for 30 minutes. After soaking, cook the rice until it is 70% done, then drain and set aside.
  2. 2. Heat 2 tbsp oil in a pan and fry sliced onions until golden brown. Remove half for garnishing and keep the rest in the pan.
  3. 3. Add cumin seeds, cloves, cardamom, and bay leaf to the pan. Stir for 30 seconds until aromatic, then add chopped tomatoes and cook until soft.
  4. 4. Mix in turmeric powder, red chili powder, biryani masala, and salt. Add yogurt and stir until the spices are well blended.
  5. 5. Add the mixed vegetables and paneer to the spice mixture, cooking for 5 minutes until lightly cooked but still firm.
  6. 6. In a heavy-bottomed pot, layer half the cooked rice, followed by the vegetable mixture. Sprinkle fresh mint leaves and coriander over it, then add the remaining rice and fried onions.
  7. 7. Drizzle 4 tbsp ghee evenly over the layers. Cover the pot tightly with a lid or aluminum foil and cook on low heat for 20-25 minutes for the dum process.
  8. 8. Remove from heat and let it rest for 5 minutes. Gently mix the layers before serving, ensuring the flavors are evenly combined.
  9. 9. Serve hot with raita or a yogurt-based side dish for a complete meal.
