Ingredients
- 1 kg Basmati Rice
- 200 g Dahi
- 200 g Paneer
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 ml Ghee
- 100G Oleo
- 100G Biryani Masala (100g)
- 100 g Garlic
- 1Bunch Pudina
- 100 g Coriander Leaves
- 20 g Cardamom Green
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 100 g Tej Patta
- 20 g Turmeric Powder
Instructions
- 1. Wash and soak the basmati rice in water for 30 minutes. After soaking, cook the rice until it is 70% done, then drain and set aside.
- 2. Heat 2 tbsp oil in a pan and fry sliced onions until golden brown. Remove half for garnishing and keep the rest in the pan.
- 3. Add cumin seeds, cloves, cardamom, and bay leaf to the pan. Stir for 30 seconds until aromatic, then add chopped tomatoes and cook until soft.
- 4. Mix in turmeric powder, red chili powder, biryani masala, and salt. Add yogurt and stir until the spices are well blended.
- 5. Add the mixed vegetables and paneer to the spice mixture, cooking for 5 minutes until lightly cooked but still firm.
- 6. In a heavy-bottomed pot, layer half the cooked rice, followed by the vegetable mixture. Sprinkle fresh mint leaves and coriander over it, then add the remaining rice and fried onions.
- 7. Drizzle 4 tbsp ghee evenly over the layers. Cover the pot tightly with a lid or aluminum foil and cook on low heat for 20-25 minutes for the dum process.
- 8. Remove from heat and let it rest for 5 minutes. Gently mix the layers before serving, ensuring the flavors are evenly combined.
- 9. Serve hot with raita or a yogurt-based side dish for a complete meal.
