Ingredients

  • 1 head Cauliflower
  • - Green Peas
  • 200 g Paneer
  • - Fresh Cream
  • 200 ml Ghee
  • 100 g Hing Khoda
  • 500 g Capsicum Green
  • 100 g Jeera
  • 1 Kg Kissan Tomato Puree
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Heat the ghee in a handi or deep pot over medium heat. Add cumin seeds and hing, and let them sizzle for 30 seconds.
  2. 2. Add the tomato puree, turmeric powder, red chili powder, and coriander powder, and cook for 5-7 minutes, stirring occasionally, until the ghee starts to separate.
  3. 3. Stir in the paneer cubes, cauliflower florets, green peas, and capsicum. Mix well to coat the vegetables in the spice mixture.
  4. 4. Add fresh cream and garam masala, stirring to combine. Cover with a lid and cook on low heat for 15-20 minutes, allowing the flavors to meld and vegetables to become tender. Stir occasionally to prevent sticking.
  5. 5. Taste and adjust salt as needed. Turn off the heat and let the dish rest covered for 5 minutes to enhance the dum-style cooking effect.
  6. 6. Garnish with chopped fresh coriander leaves and serve hot with naan, roti, or steamed rice.
