Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 500 g Suji
  • 200 g Dahi
  • 1 box Baking Soda
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 300 g Ginger Paste
  • 250 ml Olive Oil
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 50G Green Chilies
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. In a mixing bowl, combine millet flour, semolina, yogurt, and a pinch of salt. Add water gradually to form a thick, lump-free batter. Let it rest for 20 minutes.
  2. 2. Stir the batter and add fruit salt or baking soda. Mix gently to incorporate air into the batter.
  3. 3. Grease idli molds, pour the batter into each cavity, and steam the idlis for 10-12 minutes on medium heat. Once cooked, remove and set aside.
  4. 4. Heat 1 tablespoon of oil in a tawa or skillet. Add mustard seeds and cumin seeds, letting them crackle.
  5. 5. Add chopped green chilies, onion, and ginger paste. Sauté until the onions turn translucent.
  6. 6. Stir in the chopped tomato, turmeric powder, red chili powder, garam masala, and salt. Cook until the tomatoes soften and the masala thickens.
  7. 7. Place the steamed idlis on the tawa, spoon the prepared masala over each idli, and let them cook for 2-3 minutes on low heat to absorb the flavors.
  8. 8. Garnish with fresh coriander leaves and serve hot with coconut chutney or sambar.
