Ingredients
- 500 Grms Bajra Atta Millets Atta 500 Grms
- 500 g Suji
- 200 g Dahi
- 1 box Baking Soda
- 500 g Onion
- 500 g Tomato - Hybrid
- 300 g Ginger Paste
- 250 ml Olive Oil
- 100 g Coriander Leaves
- 50g Everest Garam Masala
- 50G Green Chilies
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. In a mixing bowl, combine millet flour, semolina, yogurt, and a pinch of salt. Add water gradually to form a thick, lump-free batter. Let it rest for 20 minutes.
- 2. Stir the batter and add fruit salt or baking soda. Mix gently to incorporate air into the batter.
- 3. Grease idli molds, pour the batter into each cavity, and steam the idlis for 10-12 minutes on medium heat. Once cooked, remove and set aside.
- 4. Heat 1 tablespoon of oil in a tawa or skillet. Add mustard seeds and cumin seeds, letting them crackle.
- 5. Add chopped green chilies, onion, and ginger paste. Sauté until the onions turn translucent.
- 6. Stir in the chopped tomato, turmeric powder, red chili powder, garam masala, and salt. Cook until the tomatoes soften and the masala thickens.
- 7. Place the steamed idlis on the tawa, spoon the prepared masala over each idli, and let them cook for 2-3 minutes on low heat to absorb the flavors.
- 8. Garnish with fresh coriander leaves and serve hot with coconut chutney or sambar.
