Ingredients

  • 500 g Suji
  • 200 ml Ghee
  • - Frozen Peas
  • 100 g Kaju Kani
  • 250 g French Beans
  • 250 g Carrot
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 50G Green Chilies
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Dry roast the rava (semolina) in a pan on medium heat for 5 minutes, stirring continuously, until aromatic. Set aside.
  2. 2. Heat ghee in a large pan and add mustard seeds. Once they start to splutter, add cumin seeds, curry leaves, and chopped green chilies. Fry for 1 minute.
  3. 3. Add the chopped green beans, carrots, and peas to the pan. Sauté the vegetables for 3-4 minutes until slightly softened.
  4. 4. Stir in the cashews and turmeric powder, and cook for another 2 minutes to enhance the flavors.
  5. 5. Add 2 cups of boiling water to the pan and bring it to a gentle simmer. Stir in the roasted rava slowly to avoid lumps.
  6. 6. Cook the mixture on medium heat, stirring occasionally, until the rava absorbs the water and the khichdi reaches a creamy consistency, about 6-8 minutes.
  7. 7. Add salt and lemon juice, mix well, and cook for 1 more minute.
