Ingredients

  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 250 g Carrot
  • - Green Peas
  • 500 g Capsicum Green
  • 200 ml Cow Ghee
  • 100 g Coriander Leaves
  • 500 g Suji
  • medium Chilli Green Long
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds
  • 100 g Curry Leaves

Instructions

  1. 1. Dry roast the semolina in a pan on medium heat for 3-4 minutes until aromatic and slightly golden, then set aside.
  2. 2. Heat the ghee or oil in a large pan and add mustard seeds; let them splutter, then add curry leaves and green chilies. Sauté for 1 minute.
  3. 3. Add the chopped onion and sauté until translucent, then add the tomato and cook until softened.
  4. 4. Stir in the carrots, green peas, and capsicum, cooking for 3-4 minutes until the vegetables are tender but still slightly crisp.
  5. 5. Add the turmeric powder, red chili powder, and salt, mixing well to coat the vegetables with the spices.
  6. 6. Gradually add 500ml of boiling water to the pan, then slowly stir in the roasted semolina to avoid lumps.
  7. 7. Cook the mixture on low heat, stirring constantly, until the semolina absorbs the water and the upma reaches a soft, fluffy consistency.
  8. 8. Turn off the heat, add lemon juice and chopped coriander leaves, and mix well before serving.
