- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- - Green Peas
- 500 g Capsicum Green
- 200 ml Cow Ghee
- 100 g Coriander Leaves
- 500 g Suji
- medium Chilli Green Long
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
Instructions
- 1. Dry roast the semolina in a pan on medium heat for 3-4 minutes until aromatic and slightly golden, then set aside.
- 2. Heat the ghee or oil in a large pan and add mustard seeds; let them splutter, then add curry leaves and green chilies. Sauté for 1 minute.
- 3. Add the chopped onion and sauté until translucent, then add the tomato and cook until softened.
- 4. Stir in the carrots, green peas, and capsicum, cooking for 3-4 minutes until the vegetables are tender but still slightly crisp.
- 5. Add the turmeric powder, red chili powder, and salt, mixing well to coat the vegetables with the spices.
- 6. Gradually add 500ml of boiling water to the pan, then slowly stir in the roasted semolina to avoid lumps.
- 7. Cook the mixture on low heat, stirring constantly, until the semolina absorbs the water and the upma reaches a soft, fluffy consistency.
- 8. Turn off the heat, add lemon juice and chopped coriander leaves, and mix well before serving.
