- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- 250 ml Olive Oil
- 100 g Lemon
- 500 g Capsicum Green
- 100 g Coriander Leaves
- 50g Everest Garam Masala
- 50G Green Chilies
- - Green Peas
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Heat 2 tbsp of cooking oil on a tawa or flat pan over medium heat and add the cumin seeds; let them splutter for 30 seconds.
- 2. Add the finely chopped onions and sauté until golden brown, followed by the green chilies, stirring for 1 minute.
- 3. Toss in the chopped tomatoes and cook until they turn soft and mushy, about 3-4 minutes.
- 4. Add the grated carrot, capsicum, and green peas, sautéing for 2-3 minutes until slightly tender.
- 5. Stir in the turmeric powder, red chili powder, and salt, mixing well to coat the vegetables in the spices.
- 6. Add the crumbled paneer and mix thoroughly, ensuring it combines evenly with the vegetables; cook for 3-4 minutes.
- 7. Sprinkle garam masala and chopped coriander leaves, mixing well, and cook for another 1 minute.
- 8. Turn off the heat, squeeze fresh lemon juice over the bhurji, and give it a final mix before serving.
