- 500 Grms Bajra Atta Millets Atta 500 Grms
- 500 g Suji
- 200 g Dahi
- 1 box Baking Soda
- 100 g Yellow Mustard Seeds
- - Grated Coconut
- 200 g Roasted Chana Dal
- 100 g Tamarind Paste
- 200 ml Mustard Oil
- - Chilli Green 100 G
- - Dry Red Chillies
- 100 g Curry Leaves
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. In a bowl, mix millet flour, semolina, salt, and yogurt to form a thick batter. Let it rest for 20 minutes to ferment slightly.
- 2. Add baking soda to the batter and gently mix. Grease idli molds, pour the batter, and steam for 12-15 minutes until the idlis are fluffy and cooked through.
- 3. For the chutney, blend grated coconut, green chilies, roasted chana dal, tamarind pulp, and a pinch of salt into a smooth paste using minimal water.
- 4. Heat oil in a small pan, add mustard seeds, curry leaves, and dried red chilies for tempering. Pour over the chutney and mix well.
- 5. For sambar, heat oil in a pan, sauté chopped mixed vegetables, add turmeric powder and 500ml water, and simmer until veggies are tender.
- 6. Add tamarind pulp, salt, and adjust spices to taste. Simmer for 5 minutes and finish with a tempering of mustard seeds and curry leaves.
- 7. Serve the steamed millet idlis with coconut chutney and hot vegetable sambar for a complete platter.
