Ingredients

  • 500 Grms Ragi / Nachni Atta Millets Atta 500 Grms
  • 1 kg Idli Rice
  • 500 g Urad Dal
  • 100 g Coriander Leaves
  • 100 g Yellow Mustard Seeds
  • 100 g Jeera
  • 100 g Hing Khoda
  • 200 g Dahi
  • 200 ml Mustard Oil
  • 1 box Baking Soda
  • 250 g Carrot
  • - Chilli Green 100 G
  • 100 g Curry Leaves
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Wash and soak the idli rice and urad dal separately for 4-6 hours, then grind them into a smooth batter, combining both with the ragi flour to form a thick consistency.
  2. 2. Cover the batter and let it ferment overnight or for 8-10 hours in a warm place until it doubles in volume.
  3. 3. Once fermented, add grated carrot, chopped coriander, green chili paste, turmeric powder, salt, and yogurt to the batter and mix well.
  4. 4. Heat oil in a small pan, add mustard seeds, cumin seeds, curry leaves, and hing, and sauté for 30 seconds until aromatic. Add this tempering to the batter and mix thoroughly.
  5. 5. Just before steaming, add baking soda to the batter and gently fold it in to retain the airiness.
  6. 6. Grease idli molds with a little oil, pour the batter into the molds, and steam in an idli cooker for 12-15 minutes until the idlis are cooked and fluffy.
  7. 7. Let the idlis cool for 2-3 minutes before removing them from the molds. Serve warm with coconut chutney or sambar.
