Ingredients
- 500 Grms Ragi / Nachni Atta Millets Atta 500 Grms
- 1 kg Idli Rice
- 500 g Urad Dal
- 100 g Coriander Leaves
- 100 g Yellow Mustard Seeds
- 100 g Jeera
- 100 g Hing Khoda
- 200 g Dahi
- 200 ml Mustard Oil
- 1 box Baking Soda
- 250 g Carrot
- - Chilli Green 100 G
- 100 g Curry Leaves
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Wash and soak the idli rice and urad dal separately for 4-6 hours, then grind them into a smooth batter, combining both with the ragi flour to form a thick consistency.
- 2. Cover the batter and let it ferment overnight or for 8-10 hours in a warm place until it doubles in volume.
- 3. Once fermented, add grated carrot, chopped coriander, green chili paste, turmeric powder, salt, and yogurt to the batter and mix well.
- 4. Heat oil in a small pan, add mustard seeds, cumin seeds, curry leaves, and hing, and sauté for 30 seconds until aromatic. Add this tempering to the batter and mix thoroughly.
- 5. Just before steaming, add baking soda to the batter and gently fold it in to retain the airiness.
- 6. Grease idli molds with a little oil, pour the batter into the molds, and steam in an idli cooker for 12-15 minutes until the idlis are cooked and fluffy.
- 7. Let the idlis cool for 2-3 minutes before removing them from the molds. Serve warm with coconut chutney or sambar.
