- 100 g Curry Leaves
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the flattened rice (poha) in a colander under cold running water until softened, then set aside to drain.
- 2. Heat coconut oil in a pan over medium heat and add mustard seeds; allow them to crackle before adding curry leaves and chopped green chili.
- 3. Add the chopped onion to the pan and sauté for 2-3 minutes until translucent, then stir in the carrots and green peas and cook for another 4-5 minutes.
- 4. Sprinkle turmeric powder and salt over the vegetables, mixing well, then gently fold in the softened poha to combine evenly.
- 5. Lower the heat and add grated fresh coconut, stirring gently to infuse the dish with its rich flavor; cook for 2 minutes.
- 6. Remove from heat, sprinkle chopped coriander leaves, and drizzle lemon juice over the poha for a fresh, tangy finish.
