Ingredients

  • 100 g Coriander Leaves
  • 1 kg Fish Fillets
  • 100 g Tamarind
  • 500 g Onion
  • 100 g Garlic
  • medium Chilli Green Long
  • 500 g Tomato - Hybrid
  • 190 ml White Cooking Vinegar
  • 20 g Turmeric Powder
  • 100 g Salt
  • 200 ml Mustard Oil
  • 300 g Ginger Paste
  • - Coriander Powder
  • 100 g Jeera Powder
  • - Red Chilli Powder

Instructions

  1. 1. Wash the fish fillets thoroughly and pat them dry. Marinate with 1/2 tsp turmeric powder and 1/2 tsp salt. Set aside for 10 minutes.
  2. 2. In a small bowl, soak the tamarind in 1/4 cup warm water for 5 minutes, then extract the pulp and set aside.
  3. 3. Heat 2 tbsp oil in a deep pan over medium heat. Add chopped onions and sauté until golden brown.
  4. 4. Add the minced garlic, ginger paste, and green chilies. Sauté for 2 minutes until fragrant.
  5. 5. Add the ground spices (coriander, cumin, red chili powder, and remaining turmeric). Mix well and cook for 2 minutes.
  6. 6. Add the chopped tomatoes and cook until they turn soft and the oil starts to separate, about 5 minutes.
  7. 7. Pour in 1 cup of water, the tamarind pulp, and the vinegar. Stir and bring the mixture to a gentle boil.
  8. 8. Gently place the marinated fish fillets into the curry. Cover and cook on low heat for 8 minutes or until the fish is cooked through.
  9. 9. Taste and adjust salt as needed. Garnish with fresh coriander leaves and serve hot with steamed rice.
