Ingredients
- 100 g Coriander Leaves
- 1 kg Fish Fillets
- 100 g Tamarind
- 500 g Onion
- 100 g Garlic
- medium Chilli Green Long
- 500 g Tomato - Hybrid
- 190 ml White Cooking Vinegar
- 20 g Turmeric Powder
- 100 g Salt
- 200 ml Mustard Oil
- 300 g Ginger Paste
- - Coriander Powder
- 100 g Jeera Powder
- - Red Chilli Powder
Instructions
- 1. Wash the fish fillets thoroughly and pat them dry. Marinate with 1/2 tsp turmeric powder and 1/2 tsp salt. Set aside for 10 minutes.
- 2. In a small bowl, soak the tamarind in 1/4 cup warm water for 5 minutes, then extract the pulp and set aside.
- 3. Heat 2 tbsp oil in a deep pan over medium heat. Add chopped onions and sauté until golden brown.
- 4. Add the minced garlic, ginger paste, and green chilies. Sauté for 2 minutes until fragrant.
- 5. Add the ground spices (coriander, cumin, red chili powder, and remaining turmeric). Mix well and cook for 2 minutes.
- 6. Add the chopped tomatoes and cook until they turn soft and the oil starts to separate, about 5 minutes.
- 7. Pour in 1 cup of water, the tamarind pulp, and the vinegar. Stir and bring the mixture to a gentle boil.
- 8. Gently place the marinated fish fillets into the curry. Cover and cook on low heat for 8 minutes or until the fish is cooked through.
- 9. Taste and adjust salt as needed. Garnish with fresh coriander leaves and serve hot with steamed rice.
