Firehouse Cheeseburgers recipe

About this recipe

A bold, spicy, and deeply savory burger that packs a punch. We use lean ground beef (90/10) seasoned with smoked paprika and chipotle, topped with a melted slice of sharp cheddar and fire-charred jalapeños. Instead of a greasy bun, we use a toasted Whole Wheat brioche or Sourdough to provide structure and a nutty finish.

Ingredients

  • 100 g Salt
  • - Cheese Slices
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 120 g Burger Buns
  • 52 g Paprika Powder
  • 453 ml Jalapeno Pepper - Sliced
  • - Cumin Jeera
  • 100 g Hot Sauce
  • 7g Chilli Flakes
  • 1 kg Beef Boneless
  • 1 Kg Garlic Powder

Instructions

  1. 1. Sear the jalapeño slices in a dry pan until charred. Set aside.
  2. 2. Form the beef into a 1-inch thick patty. Press a small "thumbprint" into the center.
  3. 3. Heat a cast-iron or heavy pan to high. Sear for 3-4 minutes per side. Add the cheese in the last minute and cover the pan to melt.
  4. 4. Toast the bun lightly. Spread the yogurt-hot sauce mix, place the patty, and top with the charred jalapeños.
  5. 5. Serve the Firehouse Cheeseburgers immediately with any additional salad on the side.
