Ingredients

  • 1 piece Coconut
  • 500 g Jaggery
  • 500 g Rice Flour
  • 200 g Table Salt
  • - Green Cardamom Powder

Instructions

  1. 1. In a bowl, mix 1 cup of rice flour with a pinch of salt. Gradually add 3/4 cup of hot water while stirring to form a soft dough. Knead the dough for 2-3 minutes until smooth. Cover and set aside.
  2. 2. In another bowl, mix 1/2 cup of grated coconut, 1/4 cup of jaggery (crumbled or grated), and 1/4 tsp of cardamom powder. Combine well to make the filling.
  3. 3. Take fresh banana leaves and cut them into manageable rectangular pieces. Lightly heat the banana leaves over a flame to make them pliable.
  4. 4. Divide the dough into small portions. Take one portion and flatten it on a banana leaf into a thin circle using your fingers or a rolling pin, ensuring the edges are smooth.
  5. 5. Place a small spoonful of the coconut-jaggery filling in the center of the flattened dough. Fold the banana leaf in half, enclosing the filling, and press the edges of the dough gently to seal.
  6. 6. Repeat the process for the remaining dough and filling, creating multiple elayappams.
  7. 7. Arrange the prepared elayappams in a steamer. Steam them for 12-15 minutes or until the dough is cooked and turns slightly translucent.
  8. 8. Remove the elayappams from the steamer and let them cool for a minute. Serve warm as a snack or dessert.
