Ingredients
- 1 piece Coconut
- 500 g Jaggery
- 500 g Rice Flour
- 200 g Table Salt
- - Green Cardamom Powder
Instructions
- 1. In a bowl, mix 1 cup of rice flour with a pinch of salt. Gradually add 3/4 cup of hot water while stirring to form a soft dough. Knead the dough for 2-3 minutes until smooth. Cover and set aside.
- 2. In another bowl, mix 1/2 cup of grated coconut, 1/4 cup of jaggery (crumbled or grated), and 1/4 tsp of cardamom powder. Combine well to make the filling.
- 3. Take fresh banana leaves and cut them into manageable rectangular pieces. Lightly heat the banana leaves over a flame to make them pliable.
- 4. Divide the dough into small portions. Take one portion and flatten it on a banana leaf into a thin circle using your fingers or a rolling pin, ensuring the edges are smooth.
- 5. Place a small spoonful of the coconut-jaggery filling in the center of the flattened dough. Fold the banana leaf in half, enclosing the filling, and press the edges of the dough gently to seal.
- 6. Repeat the process for the remaining dough and filling, creating multiple elayappams.
- 7. Arrange the prepared elayappams in a steamer. Steam them for 12-15 minutes or until the dough is cooked and turns slightly translucent.
- 8. Remove the elayappams from the steamer and let them cool for a minute. Serve warm as a snack or dessert.
