Ingredients
- 100 g Curry Leaves
- 200 g Dahi
- 200 ml Ghee
- 250 g Spinach
- - Fresh Cream
- 1 kg Basmati Rice
- medium Chilli Green Long
- 20 g Turmeric Powder
- 100 g Salt
- 50 g Black Pepper Powder
- 50 g Asafoetida Powder
- - Coriander Powder
- 100 g Jeera
- 100 g Red Chili Powder
Instructions
- 1. Rinse the basmati rice thoroughly and soak it in water for 20 minutes while preparing other ingredients.
- 2. Heat oil/ghee in a large pot over medium heat. Add cumin seeds, fennel seeds, curry leaves, shallots, ginger-garlic paste, cinnamon, cloves, cardamom and green chilies. Sauté for 1-2 minutes until aromatic.
- 3. Add the chicken pieces to the pot and cook for 5-6 minutes, stirring occasionally, until the is lightly browned.
- 4. Mix in tomato, carrot, turmeric powder, red chili powder, salt. Stir well to coat the chicken with the spices.
- 5. Drain the soaked rice and add it to the pot with soaked wheat, stirring gently to combine with the and spices.
- 6. Add enough water to cover the rice and mixture by about 1 inch. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until the rice is tender and the liquid is absorbed.
- 7. Stir in the coconut milk, followed by the chopped spinach, pepper and adequate salt. Cook for an additional 3-4 minutes until the spinach wilts and the porridge reaches a creamy consistency.
- 8. Taste and adjust seasoning if needed. Serve the porridge warm, garnished with a drizzle of ghee for extra richness.
