Egg Bhorta with Rice is a comforting dish from the Indian subcontinent, loved for its simplicity and robust flavors. This dish combines mashed boiled eggs with aromatic spices, mustard oil, and onions, served alongside steamed rice for a wholesome, satisfying meal.
Ingredients
- 100 g Coriander Leaves
- 6 pcs White Eggs
- 1 kg Basmati Rice
- 500 g Onion
- medium Chilli Green Long
- 200 ml Mustard Oil
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100 g Salt
- 100 g Lemon
Instructions
- 1. Boil the eggs in a saucepan with enough water to cover them. Once the water comes to a boil, let the eggs cook for 10 minutes. Remove, cool under running water, and peel.
- 2. Cook the rice by rinsing 2 cups of basmati rice thoroughly. Add to a pot with 4 cups of water, a pinch of salt, and cook on medium heat until tender. Keep it covered and set aside.
- 3. Mash the boiled eggs in a bowl using a fork until coarsely mashed.
- 4. Heat mustard oil in a small frying pan. Add finely chopped onions and sauté until golden brown. Add green chilies and sauté for another minute.
- 5. Add the mashed eggs to the pan, along with salt, turmeric, and red chili powder. Stir to combine and cook for 2 minutes until the mixture is well incorporated.
- 6. Transfer the egg mixture to a bowl. Add freshly chopped cilantro and a squeeze of lemon juice. Mix well. Serve warm with the steamed rice.
